The Best Chicken Salad Croissant Sandwiches ever! Tender chicken, crunchy celery, sweet grapes: a match made in heaven!

Chicken Salad Croissant Sandwiches
There’s just something about chicken salad. It’s creamy, it’s textured, it’s a classic. It’s just as delicious served on a croissant, in a wrap, on a bed of lettuce, or even nacked on with crackers. One of the best parts about chicken salad is that you can personalize it to your tastes. Add some crunch, add something sweet, or throw in some extra veggies – it’s always good!
Read on to learn how I make my Chicken Salad, which has consistently become anyone’s favorite that tries it.
How To Make The Best Chicken Salad
The key to a good chicken salad is the right combination of ingredients. It can’t be too wet (read, saturated in mayonnaise), it can’t have too many additions (I still want to taste the chicken!), and it has to be seasoned properly.
For me, I’ve found that the best chicken salad recipe features the following:
- A super flavorful dressing. I don’t want a sandwich drenched in mayonnaise: it needs more complexity than that. I like using Greek yogurt as the base, as this offers a nice tangy creaminess. Don’t worry, there’s still mayonnaise, but I use just enough to get the flavor. I also add lemon zest and juice, celery seeds, and a good dose of salt and pepper to make all the flavors pop.
- GRAPES! Growing up, the chicken salad that my mom made, which this recipe is based on, included halved grapes. I like using both green and red grapes for both sourness and sweetness.
- The right amount of crunch. Celery is a requirement in chicken salad, but no need to go overboard. Same with red onion: it’s easy to overpower a delicate recipe with too much! I keep the amounts minimal to ensure all the other ingredients have an opportunity to shine, too.
Ways To Make Chicken Salad Your Own

There are so many ways to make chicken salad your own! Here are a few ingredients to consider adding (in any combination!):
- Red, white, or yellow onion
- Celery
- Apple
- Pear
- Shredded carrot
- Chopped bell pepper
- Jalapeno
- Tender herbs, such as parsley, cilantro, or dill
- Chives
- Different spices or spice blends
- Greek Yogurt or Sour Cream
- Flavored mustards
- Aiolis
What To Serve With Chicken Salad Croissant Sandwiches
A great way to serve these sandwiches is “build your own” style. Allow guests to assemble their own sandwiches, offering other options like sliced bakery bread, wraps, or even crepes for them to stuff the chicken salad into. You can also offer up additional topping options like sprouts, a variety of lettuces, and other fresh herbs.
Other delicious things to serve alongside these gorgeous sandwiches:
- A lovely fruit salad tossed with fresh mint
- A variety of fresh seasonal vegetables with a myriad of dips (this high protein ranch dip is a great option!)
- Chilled white wine – because why not?

The Best Chicken Salad Croissant Sandwich
Ingredients
- 3 cups cooked chicken, chopped
- 1/3 cup celery, chopped
- 1/4 cup red onion, chopped
- 1/2 cup red and green grapes, halved
- 1/2 cup sliced almonds
- 3/4 cup Greek yogurt
- 1/4 cup mayonnaise
- 1 Tbsp dijon mustard
- 1 tsp celery seed
- 1 tsp lemon zest
- 1 Tbsp lemon juice
- 2 tsp salt
- 1/2 tsp fresh cracked pepper
- Tender chopped herbs like parsley or dill, as desired
- 4 Croissants, split
- Red leaf lettuce
Instructions
- Add all ingredients through the sliced almond to a large bowl.
- In a separate smaller bowl, add the Greek yogurt, mayonnaise, dijon mustard, celery seed, lemon zest and juice, and salt and pepper. Mix completely to combine.
- Add dressing to the bowl of ingredients and mix to combine.
- Fill each croissant with chicken salad, top with herbs (if using), and top with lettuce. Serve immediately and enjoy!
