Ok, so time for me to admit something: I really struggle with “breakfast meats”. Like, it actually stresses me out when I’m out at brunch and am asked, “Bacon, sausage links, or sausage patties”?

Angel Jamie: “Oh no thanks, I’ll be fine with eggs and toast”.

Devil Jamie: “Um…ALL OF THEM obviously. Thanks.”

I know processed meat is NOT great for my body, and that I should say no. But I just wanna say YYYYAAAASSS!!! And I normally NEVER have bacon or sausage in my house for breakfast, so when I’m out, I wanna go for it, ya know?

But then I got to thinking….”what am I depriving myself of something that I very clearly enjoy? Why can’t I just make a healthier version of it?”

This recipe is simple! It’s literally ground turkey (or any meat you like!), and some spices. DAT’S IT.

Form in to patties, “fry” ’em in a skillet, and VIOLA. Healthy turkey breakfast sausage without the added BS and fillers.

What I love most about this recipe is how great these little guys freeze up! I like to make a big batch and tuck them in the freezer for anytime (which is seldom, I’ll admit), that I just NEED some breakfast meat. Thus, freezing is the way to go at casa de Jamie.

Try these out! Mess with the recipe, try making it with pork, bison, anything! Switch up the spices, too! I’d love to know what you come up with!

Servings: 6 patties

Ingredients

  • 1 lb ground turkey
  • 1 1/2 tsp ground sage
  • 1 tsp oregano ,
  • 1 tsp salt
  • 3/4 tsp Garlic Powder
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 1/2 tsp dried rosemary,

Instructions

  • In a large bowl, combine all ingredients. Using your hands or a spoon, mix the spices thoroughly in to the ground turkey.
  • Lightly spray cast iron skillet with cooking spray, and set over medium heat.
  • Scoop turkey mixture in to about 6 to 8 patties, using your hands to form. Place in warmed skillet, and cook about 5 minutes per side, until browned and cooked through.
  • Remove from heat and allow to cool slightly.
  • Enjoy immediately, or place in freezer friendly containers to enjoy within 3 months.

Notes

Recipe Pointers
  • Get dirty! You can always wash those hands. I find that your hands are your best tools to mix things up - especially meat.
  • Feel free to use fresh herbs as opposed to dried in this recipe. Note that fresh will be stronger, so you may need to reduce the amount you use.
