I like to consider this “breakfast ice cream”. Except wayyyy healthier than the Sea Salt Caramel rendition I’d really actually like to eat for breakfast.

This smoothie bowl was divine. So incredibly creamy, I had to double check to be sure I didn’t add heavy whipping cream instead of almond milk in my early-morning-delirium.

The Secret Ingredients

Avocado

Stay with me – please. I promise it’s not as weird as it sounds. Freezing cubed avocado is the trick. When you blend a frozen fruit that’s already smooth – MAGIC. Ever heard of blending a frozen banana to make “nice cream”? Same concept. And I’ll get to more of those recipes later…

Spinach

Another amazing ingredient: spinach. I love throwing spinach in my smoothies. It blends beautifully, and doesn’t have a super strong taste. However, sometimes it’s a hassle, and it’s annoying to stuff a handful of spinach in my blender (which probably equates to like, 1 tablespoon, maybe).

My solution? Frozen spinach. Frozen spinach pucks to be precise. Where might one find these, you ask? EASY. The  microwavable spinach you’ll find in your grocery store’s frozen aisle. The spinach is frozen in to these “pucks”, creating the perfect serving to plop right in to my blender. You – 1. Saturday morning – 0.

Don’t worry. There’s other non-weird ingredients in this smoothie bowl that I think you’ll be able to get your head around. Frozen banana (again – a must for that creamy consistency we’re talkin’ about), kiwi, honey, and almond milk.

How To

Blend the daylights out it, pour into bowl, top with desired ingredients (ice cream is off-limits, sorry). Grab a spoon, sit down at your kitchen table, and dive in. Feel great yet?

Ingredients

  • 1/2 avocado, cut into small chunks and frozen
  • 1/2 banana, sliced and frozen
  • 1 kiwi peeled
  • 1 frozen spinach puck (or 1/4 cup raw)
  • 1 tsp honey
  • 1 1/4 cup unsweetened almond milk
  • 1 tsp raw pumpkin seeds
  • 2 tsp raw coconut
  • 1/2 tsp chia seeds
  • kiwi slices, to serve

Instructions

  • Place frozen avocado. frozen banana, kiwi, spinach, honey and almond milk in blender.
  • Blend on high for 30 seconds or more.
  • Add to bowl, top with pumpkin seeds, coconut, chia seeds, and kiwi.

Notes

-Feel free to add your protein powder of choice. Vanilla would be delicious!
-Get creative with your toppings: bananas, strawberries, hemp seeds, honey, or nuts would all make great additions.
-Trust me on freezing the avocado and banana in advance. It's what makes this smoothie bowl extra dreamy-creamy.
