Where Piña Coladas “Began”

The classic cocktail recipe was created in 1954 by bartender Ramón “Monchito” Marrero at the Caribe Hilton hotel in Puerto Rico, though there are earlier counts that hint that this creamy cocktail’s creation precedes Monchito’s version. Regardless, I’m glad more than 1 person thought that putting pineapple and coconut together was a good idea.

Let’s Keep Things Clean

This recipe for Piña Colada Smoothies includes ingredients that don’t precisely line up with the original classic recipe. For starters, no rum.

WAIT! Come back. I promise this one’s still good, even without the booze. But if you aren’t piña-ing without it…see below.

Second, instead of heavy coconut cream, which is delicious for all intents and purposes, I opt for coconut butter. It offers the creaminess you would otherwise get from high-fat (and sugar!) coconut cream, but without the additives.

While fresh pineapple and coconut would work just fine here, I like to freeze mine, and highly suggest you do the same. Here’s why:

  1. Frozen fruit means no ice is needed. As ice melts, it will only dilute the already delicious Piña Colada flavors. But not with pure frozen fruit!
  2. When blended long enough, frozen fruit does something magical. It expands Lightens. Turns to FLUFF.

Keeping up with the coconut (sounds like a good name for a show or something?!), I like using coconut water as opposed to water or milk – either dairy or dairy free. I avoid dairy to begin with, and while coconut milk would probably make this super luscious, I prefer the lightness that coconut water offers. But you do you – go all in with the coconut milk if you like! Report back if you do!

Spice Things Up

While this version is very alcohol free…it doesn’t have to be. If you’re feelin’ yourself and want to add a little somethin’ somethin’ in your smoothie, I’ not hear to tell you otherwise.

The Method

As previously mentioned, you need to blend your smoothie until it’s whipped to oblivion: nice and fluffy! I highly recommend using a high power blender. This is the version I have which works great – and comes with smoothie specific blender cups.

Another reminder to freeze your fruit first. This is what will give you that nice creamy texture, as opposed to using fresh fruit and adding ice. This version will still be delicious, but the smoothie will be thinner if you use fresh fruit, and will dilute the flavor if you add ice. All considerations!

Ingredients

  • 1/2 cup frozen pineapple
  • 1/2 banana, sliced in to coins and frozen
  • 1 tsp coconut butter
  • 1/2-1 cup coconut water
  • See note for optional additions

Instructions

  • Add all ingredients to blender, and process until smooth. Adjust amount of liquid if you prefer your smoothie thinner.
  • Insert straw (umbrella optional), sip, and enjoy.

Notes

Optional Additional Ingredients:
  • Collagen Powder - I like adding Collagen Peptides to my smoothies to benefit my joints, bones, hair, and nails. This version that I use touts 18 grams of protein per serving!
  • Coconut - Up the tropical flavor by adding some shredded coconut! I use this unsweetened version which adds great texture.
  • RUM - Feeling frisky? Add 1 oz white rum and 1/2 oz dark rum per drink. Drink umbrella no longer optional.
Other Ingredient Notes:
  • This is the coconut butter I use in my smoothies. It also is a key ingredient in delicious keto-friendly fat bombs!
  • I've tried a lot of coconut waters, and this by far is my favorite. There aren't any added sugars, it isn't made from concentrate, and there aren't any weird fillers. Just straight coconut water!
