If you know me (and even if our familiarity is virtual), by now you know that I love a good savory breakfast. Don’t get me wrong: sweet brekkys have my heart as well, but there’s a special spot in there specifically for the salty.

This is definitely one of those lazy weekend, too-cold-to-go-outside kinda recipes. I gravitate towards this recipe when I know I have a long day ahead of me that I need to be fueled for (whether it be chores, errands, or plans), or on a day that I know I’ll be having two meals: breakfast and dinner. It’s healthy, satiating, and easy enough to toss together (more than likely in between throwing in loads of laundry and cleaning out my refrigerator; I am the QUEEN of multi tasking).

Savory Oats with Roasted Tomatoes, Garlic Spinach, and Turkey Sausage

This Savory Oats with Roasted Tomatoes, Garlic Spinach, and Turkey Sausage is a cozy, nutritious, and satisfying breakfast! Servings: 2 servings

Ingredients

  • 1 cup oats
  • 2 cups spinach,
  • 1 1/2 cups cherry tomatoes
  • 1/2 cup cooked turkey sausage
  • 2 garlic cloves minced
  • Salt and pepper
  • Parmesan cheese to serve
  • 2 eggs

Instructions

  • Preheat oven to 400 degrees. Add cherry tomatoes to a baking sheet, toss with a drizzle of olive oil, one clove minced garlic, and salt and pepper. Roast until tomatoes burst, about 20 minutes.
  • Add 2 cups of water to medium saucepan, and add a pinch of salt. Bring to simmer. Add oats and stir to combine. Cover and allow to cook for 15 minutes. Watch closely so as to not overcook!
  • Meanwhile, heat a medium pan over medium heat. Add turkey sausage, using wooden spoon to break up. Allow to cook as you prepare the spinach.
  • Add a drizzle of olive oil to sauté pan. Add remaining clove of minced garlic, sauté for 1 minute until fragrant. Add spinach, allowing to wilt.
  • Prepare eggs to desired liking - try sunny side up!
  • Once oats are finished cooking, top with roasted tomatoes, sautéed spinach, and turkey sausage. Top with egg, fresh cracked pepper, and parmesan.
