Making Parmesan Straws with Everything Seasoning

More times than not, I will argue that using whole ingredients with little processing is best. You get to control what you put in to the recipes you’re eating, meaning the final result will be seasoned properly (i.e. to your liking), and not include any mystery ingredients.

There are OTHER times when I say, “Bring on the shortcuts!” Indulge. Live a little, Jamie.

This is one of those recipes! The main ingredients in these addicting Parmesan Straws is store bought puff pastry dough. This multi-tasking ingredient can make just about any ingredient turn into a delicious and impressive bite sized treat. It’s also a fantastic hack for any recipe that requires a flaky, doughy texture, like Chicken Pot Pie or Apple Turnovers.

What you’ll need to make these amazing Parmesan Straws is:

  • Store bought puff pastry dough
  • Egg Wash (egg +water)
  • Grated parmesan cheese
  • Dry Mustard
  • Everything Bagel Seasoning (you know the one, with sesame seeds, poppy seeds, granulated garlic, flaky sea salt!)

How To Make Parmesan Straws with Everything Seasoning

Before beginning, ensure your puff pastry is thawed in the refrigerator 24 hours in advance.

  1. Remove puff pastry from packaging and place on a floured surface.
  2. Using a floured rolling pin, roll puff pastry slightly until pastry is about 1/4 inch thick.
  3. Combine egg and 1 teaspoon water in a small bowl and whisk unti combined.  Brush egg wash over the puff pastry, ensuring the entire surface is lightly covered.
  4. Combine grated parmesan cheese and dry mustard in a small bowl. Sprinkle over half of the rolled out puff pastry, with the long edge closest to you. Add half of the everything bagel seasoning on top, too.
  5. Fold the non-cheese topped half over, like a book! Gently use your rolling pin to press the halves together.

6. Using a knife or pastry wheel, slice small strips (about 1/4 inch). The wider they are sliced, the bigger the final straw will be once baked! You can opt to slice these the long way or short way – I prefer smaller straws personally.

7. Place on a parchment lined baking sheet. Use both hands to spin the dough a few times, pressing each end of the dough in to the pan.

8. Lightly brush with egg wash, and top with remaining everything bagel seasoning.

9. Place in freezer for about 30 minutes – this helps the straws not unfold as they bake.

9. Preheat oven to 400 degrees. Once at temp, remove straws from the freezer and to the oven. Bake for 15 minutes until straws are golden brown and fragrant. Allow to cool before serving.

Frequently Asked Questions (FAQs)

You will need store bought puff pastry. egg, grated parmesan cheese, dry mustard, and everything bagel seasoning!

Fret not! Place a piece of parchment paper on on half of the puff pastry, similar to how it came in the package (or if you still have that piece of paper, use that!). Return to the refrigerator for 30 minutes, or until the dough firms back up.

Here is my recipe for Everything Bagel Seasoning which is so simple!

These Parmesan Straws puff up nicely in the oven, so you perhaps sliced them too wide. Also, after twisting the dough on the baking sheet, make sure that you really press the ends down: this helps them not unravel as they bake. Lastly, don’t forget to freeze them before they bake!

These are best served within 1 day of baking. You can maybe stretch it to 2, but the fresher, the better.

Store these Parmesan Straws in a lidded container. I leave one of the corners open ensure they don’t get soggy!

Ingredients

  • 1 lb puff pastry, thawed
  • 1 egg, lightly beaten with 1 teaspoon water
  • 1 cup parmesan cheese, grated
  • 1/2 tsp ground mustard
  • 2 Tbsp everything bagel seasoning

Instructions

  • Before beginning, ensure your puff pastry is thawed in the refrigerator 24 hours in advance.
  • Remove puff pastry from packaging and place on a floured surface.
  • Using a floured rolling pin, roll puff pastry slightly until pastry is about 1/4 inch thick.
  • Combine egg and 1 teaspoon water in a small bowl and whisk unti combined.  Brush egg wash over the puff pastry, ensuring the entire surface is lightly covered.
  • Combine grated parmesan cheese and dry mustard n a small bowl. Sprinkle over half of the rolled out puff pastry, with the long edge closest to you. Top with half of the everything bagel seasoning, as well.

    1. Great call DK! The photos are a bit wider than 1/4 inch. I recommend slicing them a little more slim since they do puff up nicely in the oven. Just know that the wider they’re sliced, the wider the end product will be. The good news is that regardless…they’re still delicious. Enjoy!

  1. When do you add the 1 Tbsp everything bagel seasoning? I don’t see that step in the directions. Looking at the pictures, one picture shows it with the cheese. Another picture shows it sprinkled onto the twisted pastry.

    1. Hi Carol! Thanks for your question! I went in and updated the recipe to reflect more clearly when to add. I also increased the amount of everything bagel seasoning, since you’ll put it both inside the straws (along with the parmesan cheese), as well as sprinkled on top. Take a look at the recipe and let me know if you have any other questions. I hope you enjoy these as much as I have!

    1. Hi Mary! I would say these are best when served within 1 day of being made (2, maybe!). I stored mine in a glass container with a lid, and left one of the corners unsealed so they wouldn’t get soggy. I hope you enjoy them!
