What beats brunch? It truly may just be my favorite meal. Of all the reasons to gather around the table, this one seems to encourage everyone to linger just a little longer, pour one more cup of copy, and perhaps enjoy one (or two!) more bites. 

What’s more is the variety that brunch offers. No dish is off the table, with classics like Eggs Benedict and French Toast gracing most spreads, right next to bed of lightly dressed greens or Roasted Brussels sprouts. The non-negotiable of course is a breakfast beverage. 

Of some of the coziest sweet brunch options, French Toast tends to be my favorite. I took things up a notch (or five!) in this Sourdough French Toast with Roasted Spiced Apples.

Fresh Baked Sourdough...French Toast!

A good French Toast is only as good as the bread it’s made with. 

As most home bakers, 2020 has brought a lot of new excursions in to the kitchen for me. Of course, that extends to homemade bread baking. I made a sourdough starter back in April following the expert instruction of Amanda from Heartbeet Kitchen. I’ve made countless loaves of sourdough bread ever since and have learned a thing or two about keeping something new alive (read: not just my plants). 

While there is no way I would ever tire of a fresh slice of sourdough slathered in butter, I wanted to do something new with my newfound hobby of sourdough. That’s where this idea for Sourdough French Toast came from!

An Autumanl Touch

French Toast naturally would be getting a kiss of cinnamon and a brush of nutmeg, but I wanted to take the Fall flavors to the next level. Apples, of course!

Peeled and sliced apples are tossed with coconut oil and more warm spices: cinnamon, cloves, and nutmeg. They get roasted in the oven as the French toast is prepared. The aroma that will fill your kitchen as you slowly sip coffee and follow this recipe is sure to bring any Autumnal joy you’ve not yet experienced this season.

Sourdough French Toast with Roasted Spiced Apples

Ingredients

  • 2 tsp coconut oil
  • 1 apple, peeled and thinly sliced
  • 4 slices sourdough bread
  • 2 eggs, lightly whisked
  • 3/4 tsp cinnamon, divided
  • 1/2 tsp nutmeg, divided
  • 1/4 tsp vanilla extract
  • Butter or coconut oil, for frying

Instructions

  • Preheat oven to 400 degrees.
  • Peel, core, ad thinly slice apple. Place in a small baking dish lined with parchment paper. Drizzle with 2 teaspoons of coconut oil and sprinkle with 1/4 teaspoon cinnamon and 1/8 teaspoon nutmeg. Toss lightly to coat the apples, and place in oven. Bake for 15 minutes.
  • Meanwhile, prepare the French toast. In a shallow dish, lightly whisk two eggs. Add in remaining cinnamon and nutmeg, along with the vanilla.
  • Heat a cast iron skillet over medium low heat. Add a small pad of butter (if using), or else about a teaspoon of coconut oil. You'll want enough to coat the pan.
  • Dip 1 sourdough slice in to the egg and spice mixture, allowing it to soak in to the bread. Place bread in to skillet, allowing to fry until golden brown on each side. Continue process with other pieces, adding more butter or coconut oil to the pan as needed.
  • Serve French Toast with Roasted Spiced Apples and warm maple syrup.
