The Greenest Stir Fry there ever was! This delicious dish is filled with broccoli, pea pods, asparagus, green onion, and celery. It’s a simple and nutritious meal or side dish!

The Greenest of Green

This stir-fry checks all the healthy boxes. Anyone else feel like they’re being uber healthy when they eat fresh green things? That’s probably because it’s absolutely true, but something about it gives me a swell of confidence knowing that I am wholly taking care of my body.

When I’m feeling a little sluggish or if I’ve overindulged a bit too much, this is always the “recipe” I reach for. That term is loosely used, since this is more of a method than a recipe. Read on to learn more about my healthy green stir-fry that always receives praise from those who eat it!

How To Make The Greenest Stir Fry

Stir fry is a lifestyle. That phrase can often be overused, but I wholeheartedly mean it here. I make stir fry on my busiest nights, when I’m looking for something healthy, or when the veg in my fridge is on its last legs. It’s an excellent way to use up what you have, or get creative with ingredients you aren’t as familiar with. 

In order to make a stir fry deemed the “greenest”, it’s simple: find all the green veg you possibly can, add it to a large pan with a little oil, and watch it come to life!  Vegetables become increasingly more vibrant as they cook this way, leaving you with a beautiful plate. The Greenest Stir Fry

This is The Greenest Stir Fry filled with broccoli, pea pods, asparagus, green onion, and celery. It's nutritious and so simple to make! It's a wonderful side dish or vegetarian main course.

Ingredients

  • 1 Tbsp olive oil
  • 3 cloves garlic, finely minced
  • 1 lb broccoli
  • 1/2 lb asparagus, cleaned and sliced on the bias into 1-inch pieces
  • 1/2 lb snow pea pods, destemmed (see notes)
  • 3 stalks celery, cleaned and sliced on the bias into 1-inch pieces
  • 2 tsp aminos, or other soy product or substitute
  • 5 green onions, sliced on the bias into 1-inch pieces
  • 1 Tbsp sesame seeds

Instructions

  • Add olive oil to a large sauté pan and heat over medium heat. Add garlic and sauté until fragrant, about 1 minute.
  • Add broccoli and stir to combine. Allow cooking until right green, about 5 minutes. Add asparagus, cooking for an additional 2 minutes.
  • Add snow pea pods and celery and toss completely to combine. Continue cooking until all vegetables are bright green and similarly tender. Add aminos and green onions, cooking an additional 1 minute.
  • Transfer to a serving platter and sprinkle with sesame seeds.
